Spaghetti with Meatballs

Spaghetti and Meatballs in homemade sauce

Ingredients

Meatballs
  • 1/2 Kg of mince mutton (Goat Meat)
  • 1 1/2 teaspoons salt
  • 1 table spoon garlic
  • 1 table spoon ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili pepper
  • Finely chopped spinach
  • Bread crumbs 
  • 2 Eggs
Meatball Sauce
  • Extra-virgin olive oil 
  • Finely chopped onions 
  • Crushed tomato
  • 1 1/2 teaspoons salt
  • 1 table spoon garlic
  • 1 table spoon ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili pepper
  • 2 Bay leaves
  • Finely chopped parsley
  • Mushrooms (Optional)
  • Olives (Optional)
  • Red Wine (Optional)
Spaghetti
  • Spaghetti
  • Chili flakes
  • Finely chopped parsley
  • Oregano

Instructions

Preparing the Meatballs

In a large bowl, add minced meat, salt, finely chopped ginger and garlic, black pepper and chili powder. Use a grinder or your hands to mix the ingredients until they are nicely combined.

Add few slices of bread and fine mix it in a grinder. Add the finely grind bread, Egg and chopped spinach to the marinated meat and mix well

Make small balls from the meat mix of about 3 to 4 cm in diameter. Place it in a plate with all purpose flour and roll it in the flour

We need to now deep fry these meatballs. Warm oil in a wok. Add meatballs and cook, turning occasionally, until browned on all sides. One way to find out if the meat is nicely cooked from inside is to poke a knife and check the meat.

Making big meat balls usually leave the meat uncooked. Smaller meatballs cook quicker than the bigger ones. Transfer meatballs to a plate. Damp them on a tissue paper to soak all the oil

Preparing the Spaghetti

Add Spaghetti and few drops of olive oil to a large pot of boiling salted water, bring it to boil till the time Spaghetti become transparent. This is one way to know that the spaghetti are cooked

Add Oregano, Chili flakes, Black Pepper and Parsley to the cooked Spaghetti. Stir, which it comes to boil and then drain

Preparing the Sauce

Boil the tomatoes and crush half of them in a grinder.

Finely chop onions and garlic along with some green chili

Add onion and some chilies to a pan and cook until the onion is soft and caramelized. Once done, add crushed tomatoes and bay leaf. Season with salt and pepper and bring to a simmer.

Add the other boiled Tomatoes and crush them in the pan by hand. I like to leave behind some chunks of tomato in the sauce that can provide some tangy taste. Cook the mixture under cover until well done.

So as to give the sauce a sweeter taste, I would add some tomato ketchup for taste and bring it to simmer again. The sauce is ready

Putting all together now

Add the meatballs and the sauce together and cook it for some time.

Once done well with the sauce, server it along with Spaghetti and / or Italian bread
